Falhari Misal

Ingredients

  • 1 boiled potato
  • 1 cup grated coconut
  • ½ cup soaked sabudana
  • ½ cup potato sev (unsalted)
  • 2 tbsp crushed peanuts
  • ½ cup boiled peanuts
  • 2 chopped green chillies
  • 1 tbsp ghee
  • 1 tsp cumin seeds
  • Rock salt and sugar as required

Method

  • Grind the grated coconut and crushed peanuts together with a little bit of water and keep it aside.
  • In a pan, heat some ghee and add cumin seeds and green chillies. To this, add the coconut mixture and half a cup of water and keep stirring it.
  • Now mash the boiled potato in this and add the soaked sabudana to the pan. Add a little bit of water to balance the consistency and mix it all well.
  • Add the boiled peanuts, a pinch of sugar and rock salt as needed and mix it well. Allow it to cook for 2-3 minutes. Turn the flame off.
  • Garnish it with some potato sev and serve it hot.

Upvas Kachori

Ingredients

  • 3 whole boiled potatoes
  • 2 tbsp arrowroot powder
  • ½ cup of grated paneer
  • 2 chopped green chillies
  • 1 tsp cumin powder
  • Rock salt as required

Method

  • In a mixing bowl, add the grated paneer, green chillis, cumin powder and rock salt. Mix it all well and set it aside.
  • Now take each potato and carve it into a bowl shape in order to create space for the filling.
  • Add a spoonful of the paneer stuffing into the potato and cover it completely.
  • Roll each of the stuffed potatoes in arrowroot powder and keep it ready.
  • Deep fry each of these potatoes until they turn golden brown. Drain and soak the excess oil.
  • Serve it hot with any yogurt-based dip or chutney.

Potato Chivda

Ingredients

  • 2 cups of grated potatoes
  • 2 tbsp groundnuts
  • 1 tbsp cashewnuts
  • 1 tbsp raisins
  • 2 green chillies
  • 1 tbsp powdered sugar
  • Vegetable oil (for frying)
  • Rock salt as required

Method

  • Soak the grated potatoes in cold water for about 30 minutes.
  • Now squeeze the excess water from the potatoes and place it on a clean cloth.
  • Heat some oil in a pan and deep-fry the grated potatoes until they turn slightly brown and crispy. Drain the excess oil and transfer it to a separate bowl.
  • Now shallow fry the groundnuts, cashews, raisins and green chillies and add it to the potato chivda bowl.
  • Add powdered sugar and rock salt to this and give it a good toss.
  • Allow it to cool down and serve it as a pre-appetizer.

Coconut Barfi

Ingredients

  • 2 cups of grated coconut
  • 1 cup of sugar
  • 3 tbsp milk
  • 1 tbsp fresh cream
  • 1 tbsp ghee
  • 1 tsp green cardamom powder
  • 1 tbsp sliced almonds
  • 1 tbsp pistachio shavings

Method

  • Heat the ghee in a pan and add the grated coconut, sugar, milk, fresh cream, cardamom powder and half the almond and pistachio shavings.
  • Mix all the ingredients well and allow it to cook for 3-4 minutes.
  • In the meantime, prepare a setting tray by greasing it with a little bit of ghee.
  • Once the coconut appears cooked and slightly changes its color, take it off the flame.
  • Transfer the coconut barfi mixture into the greased tray and evenly press it for a uniform layer. Now sprinkle the rest of the almond and pistachio shavings onto it.
  • Chill the tray in the refrigerator for about 2-3 hours before cutting it into small pieces.
  • Serve it cold or at room temperature.
