Cheesy Crispy Corn

Ingredients:

  • 3 cups of corn
  • 5-6 tbsp corn flour
  • 5-6 tbsp all-purpose flour
  • 1 tbsp lemon juice
  • ½ cup of chopped onions
  • ½ cup of grated cheese
  • 3 tbsp chopped coriander
  • 1 tsp cumin powder
  • 1 tsp red chilli powder
  • 1 tsp chaat masala
  • 2 tbsp butter
  • Salt and pepper to taste
  • Oil (for frying)

Method:

  • Boil some water in a pot and add a little bit of salt to it. To this, add the corn and allow it to boil for 2-3 minutes.
  • Combine corn flour, all-purpose flour, a pinch of salt and pepper and little bit of grated cheese. Now coat all the corn kernels in this mixture. Set it aside.
  • Heat some oil in a pan for frying, deep-fry the coated corn kernels in batches. Soak the excess oil.
  • Now sprinkle cumin powder, red chilli powder and chaat masala and add more salt and pepper, if needed. Toss it all well.
  • Make sure the corn is still hot, sprinkle grated cheese and drizzle melted butter.
  • Serve it hot with mint chutney.

Chinese Crispy Corn

Ingredients:

  • 3 cups of corn
  • ½ cup of corn flour
  • 2 tbsp all-purpose flour
  • 2 tbsp sesame seeds
  • 1 tbsp schezwan sauce
  • 1 tbsp chilli sauce
  • ½ tsp soy sauce
  • 2 tsp finely chopped garlic
  • 2 tsp finely chopped ginger
  • 1 tbsp butter
  • ½ cup of chopped spring onion greens
  • ½ cup of chopped onions
  • Salt and pepper as per taste
  • Oil (for frying)

Method:

  • Sprinkle some spring onion greens on top and serve it piping hot.

Crispy Corn Fritters

Ingredients:

  • 2 cups of corn
  • ½ cup of chopped onions
  • 1 tbsp chopped garlic
  • 2 tbsp melted butter
  • 2 eggs
  • 3 tbsp milk
  • 1 cup of all-purpose flour
  • 1 tsp baking powder
  • 2 tbsp chopped coriander
  • 1 tbsp chaat masala
  • Salt and pepper as needed
  • Oil (for frying)

Method:

  • In a mixing bowl, combine corn, onions, coriander, garlic, butter, baking powder, pepper and salt. Mix it all well.
  • To this, add the eggs and milk and mix it well.
  • Now add the flour and mix again.
  • Heat some oil in a pan for frying. Take a dollop of the batter on greased palms and drop it in hot oil. Deep-fry both sides of the fritter until it turns golden-brown and crispy.
  • Repeat to prepare all corn fritters.
  • Soak the excess oil and sprinkle some chaat masala.
  • Serve it hot with coriander chutney and ketchup.
