Step by Step Guide for Vegetable Lasagna


Vegetable Lasagna is an all-time favorite comfort food that can be easily prepared at home. Prepare the veggies

Ingredients

  • 2 cups chopped spinach
  • ½ cup chopped carrots
  • ½ cup chopped zucchini
  • ½ cup mixed peppers
  • 2 tbsp olive oil
  • Salt and pepper to taste

Procedure

  • Heat the olive oil in a pan and add the carrots, zucchini and peppers. Cook it for 3-4 minutes
  • To this, add the spinach, a pinch of salt and pepper and allow it to cook for 2 minutes
  • Allow the veggies to cool down and set it aside

Prepare the tomato sauce

Ingredients

  • 2 cups tomato puree
  • 1 cup roughly chopped basil leaves
  • 3-4 cloves of chopped garlic
  • 2 tbsp. olive oil
  • 1 tbsp. chilli flakes
  • Salt and pepper to taste

Procedure

  • Heat the olive oil in a pan and add the chopped garlic and chilli flakes. Cook it for 1-2 minutes
  • To this, add the tomatoes, salt and pepper and allow it to cook for 4-5 minutes
  • Add the basil leaves and cook it for another minute
  • Turn the flame off and set the sauce aside

Additional ingredients

  • 8-10 lasagna noodle sheets
  • 2 cups of cottage cheese
  • 1 cup of grated mozzarella cheese
  • Salt and pepper to taste

Final Preparation

  • Preheat and oven to 220°C
  • Take a large mixing bowl and add the veggies and cottage cheese to it. Mix it well and set it aside
  • Take a baking dish and grease it with some olive oil
  • Add a layer of the tomato sauce evenly
  • On it, place 3-4 lasagna noodle sheets, depending on the size of your baking dish
  • Add a layer of veggies and cottage cheese mixture on top of the noodle sheets and distribute it evenly
  • Add some grated cheese on it
  • Repeat these steps again – Start with adding a layer of tomato sauce, then the lasagna noodle sheets, veggies and then some cheese
  • Sprinkle a generous layer of cheese on the topmost layer
  • Cover the baking dish with a foil paper, but ensure it does not touch the cheese beneath it
  • Place the baking dish in the preheated oven for 10-12 minutes till the cheese starts bubbling
  • Take the lasagna out of the oven and allow it to slightly cool down
  • Serve it hot with a sprinkle of basil leaves on top
