Malai Kofta


  • 1 cup of grated paneer
  • ½ cup of grated yams
  • 1 tbsp mawa
  • 2 tbsp corn flour
  • 2 tsp red chilli powder and garam masala
  • 1 tsp turmeric powder
  • 1 tsp sugar
  • 1 tbsp kasuri methi
  • 1 cup of chopped onions
  • 1 cup of chopped tomato
  • 1 tbsp ginger-garlic paste
  • ½ cup of cashew paste
  • 1 cup of breadcrumbs
  • Salt as required


  • To prepare the slurry, mix two tablespoons of regular flour with some water and set it aside. 
  • Mix grated paneer, yams and mawa in a bowl. Add corn flour, turmeric powder, one teaspoon red chilli powder and salt as needed and mix it all well to form a smooth dough. 
  • Divide the dough into medium sized koftas and coat it in the slurry. Now coat each kofta with breadcrumbs and set it aside. 
  • In a deep vessel, heat some oil and deep-fry the koftas. Set it aside.
  • In a separate pan, heat some oil and add the onions. Once the onions turns slightly translucent, add ginger garlic paste, chopped tomatoes, turmeric, red chilli powder, cashew paste and half a cup of water.
  • Allow the mixture to cook for a minute and then add salt, sugar, kasuri methi and garam masala. Mix it all well, cover the pan with a lid and allow it to cook for 3-4 minutes. 
  • Now take the lid off and add the koftas to the gravy. Allow it to cook for another 2-3 minutes.
  • Garnish it with some fresh cream, chopped coriander leaves and crumbled paneer.  

Tastes best with: Jeera Rice and Parathas. 

Stuffed Dum Aloo


  • 2 cups of chopped spinach
  • ½ cup of boiled sweet corn 
  • 5 boiled potatoes
  • 1 cup of plain curd
  • 1 tsp besan
  • 1 tsp turmeric and coriander powder
  • 2 tsp red chilli powder and garam masala
  • 1 tsp cumin seeds
  • 1 tsp sugar
  • Salt as required


  • Heat some oil in a pan and add cumin seeds to it. Once it starts crackling, add boiled sweet corn, chopped spinach leaves, sugar and salt to it. Allow it to cook for 3-4 minutes and set it aside.
  • Take a bowl and combine plain curd, besan, garam masala, turmeric, coriander powder, red chilli powder, sugar and salt. Whisk it all well and keep adding a little water to make the mixture smooth and without lumps. 
  • Heat some oil in a pan and cook the curd mixture for 3-4 minutes. Set it aside.
  • Now take the boiled potatoes and cut them into half, vertically. Take a small scooping spoon and scoop each potato half until it has enough space to fit the spinach-corn stuffing. Deep-fry each scooped potato half until it appears golden-brown. Soak the excess oil. 
  • Stuff each potato half with the spinach-corn mixture and coat it with gravy and serve this dum aloo recipe piping hot. 

Tastes best with: Varieties of naan and rice dishes.

Baked Paneer Handi


  • 1 cup of paneer slices
  • 1 cup of chopped onions 
  • 1 cup of chopped potatoes 
  • ½ cup of carrots
  • ½ cup of cauliflower
  • ½ cup of potatoes
  • ½ cup of french beans
  • ½ cup of green peas
  • 1 bay leaf and cinnamon stick 
  • 1 tbsp ginger-garlic paste
  • 1 tbsp garam masala
  • 1 tsp red chilli powder and turmeric powder
  • 2 tbsp fresh cream
  • Salt as required


  • Heat two cups of water in a vessel and add a pinch of garam masala and salt to it. Once the water starts boiling, add the chopped carrots, cauliflower, potatoes and french beans to it. Allow the vegetables to boil for 4-5 minutes, after which drain the excess water and set it aside.
  • Meanwhile, add the tomatoes and onions to mixer grinder and grind it to a smooth paste. 
  • In a separate pan, heat some oil and add bay leaf, cinnamon stick, tomato-onion paste and ginger-garlic paste. Mix it all well and allow it to cook for 2-3 minutes. 
  • Now add the boiled vegetables, half a cup of water, garam masala, red chilli powder, turmeric and salt. Stir all the ingredients, cover the pan with a lid and allow it to cook for 4-5 minutes. 
  • Take a baking dish and place a layer of paneer slices on the bottom. Now add a layer of cooked vegetables and repeat the process, so that you have alternate layers of paneer slices and vegetables. 
  • Smear some fresh cream on top and add the grated cheese. Garnish the topmost layer of cheese with tomato slices and chopped bell peppers. Bake this dish in the oven for 18-20 minutes. 
  • Once baked, cut into the baked dish and serve this paneer handi recipe hot. 

Tastes best with: Tandoori Roti, Puris and Parathas. 

Lasooni Palak


  • 2 cups of blanched spinach leaves
  • 1 cup of chopped onions
  • 1 cup of tomato puree
  • 2 tbsp garlic paste
  • 2 tbsp ginger-chilli paste
  • 1 tbsp cumin seeds
  • ½ tsp garam masala
  • 1 tsp lemon juice
  • 2 tbsp fresh cream
  • 1 tbsp ghee
  • Salt as required


  • Grind the blanched spinach leaves in a mixer and set it aside. 
  • Heat some ghee in a pan and add cumin seeds. Once it starts crackling, add ginger-chilli paste, garlic paste and chopped onions. Cook it until the onions turn slightly translucent. 
  • Now add the tomato puree and spinach paste and allow it to cook for 2-3 minutes. 
  • To this, add the fresh cream, garam masala and lemon juice. Mix it all well and cook for another 3-4 minutes until all the ingredients combine together. 
  • Garnish it with some fresh cream and serve the lasooni palak piping hot.

Tastes best with: Stuffed Paratha, Kulcha and Tandoori Roti.
