Shahi Tukda Cake

Ingredients

  • 1-liter milk
  • 1 cup of condensed milk
  • ½ cup of mawa
  • 1 tsp green cardamom powder
  • 5-6 white bread slices
  • 3 tbsp ghee
  • ¼ cup of gulkand

Method:

  • Heat the milk in a vessel and keep stirring it constantly for about a minute. To this, add the condensed milk and continue stirring. Once the milk starts thickening and reduces in quantity, add the mawa and cardamom powder and continue stirring. Once the milk has reduced to almost half its quantity, turn off the flame and set the rabdi aside.
  • Meanwhile, heat the ghee in a separate pan. Cut each bread slice into four triangular pieces and put it in the ghee. Flip it over to fry both sides. Remove the bread pieces from the ghee and set it aside.
  • In order to start layering the cake, take a deep baking dish and start with placing the fried bread pieces as the bottom-most layer. To this, add a layer of rabdi to it.
  • Now place this baking dish in a preheated oven and bake it for 15-18 minutes. Once ready, take the rabdi layered cake out and cut it into desirable pieces.
  • You can also garnish it with mint leaves and enjoy it warm or cold.

Gulkand Phirni

Ingredients

  • 1 ½ cup of soaked rice
  • 2 cups of milk
  • 1 cup of sugar
  • ½ cup of mawa
  • 3 tbsp gulkand
  • 2 tbsp almond shavings

Method

  • Grind the soaked rice to a smooth paste.
  • Heat the milk in a deep vessel and add sugar, rice paste and mawa and keep stirring it till the milk starts thickening and reduces in quantity.
  • Then add gulkand and continue stirring till it blends with the phirni completely.
  • Top it up with some almond shavings and rose petals and serve it warm or cold.

Aloo Tikki Chaat

Ingredients

  • 2 cups of mashed potatoes
  • 1 cup of plain yogurt
  • ½ cup of diced tomatoes
  • 1 tbsp tamarind chutney
  • 1 tbsp mint chutney
  • 2 tbsp sev
  • 1 tsp red chilli powder
  • 1 tsp coriander powder
  • ½ tsp cumin powder
  • Pinch of turmeric
  • Salt as required

Method

  • Add red chilli powder, turmeric, coriander powder, cumin powder and salt to the mashed potatoes and mix it all well.
  • Shape the potatoes into small tikkis and set it aside.
  • Heat some oil in a pan and shallow fry the tikkis till it turns golden-brown from both sides.
  • Arrange the tikkis on a flat plate and top it up with plain yogurt, diced tomatoes, tamarind chutney, mint chutney and sev bhujia.
  • Garnish it with chopped coriander leaves and serve immediately.

Badam Sharbat

Ingredients

  • 2 cups of almonds (soaked and peeled)
  • 1 ½ cup of sugar
  • 3 cups of water
  • 1 tsp green cardamom powder

Method

  • Grind the almonds and cardamom powder together into a smooth paste.
  • Using a muslin cloth, squeeze out the all the almond water into a bowl and set it aside.
  • Heat a pan with water and add sugar to it. Keep stirring it until the sugar has partially dissolved.
  • Now add the almond water to it and keep stirring until it starts thickening.
  • Allow it to cool down completely and chill it in the refrigerator for at least two hours.
  • Top it up with some mint leaves and almond shavings and serve it chilled.

Pyaaz Pakode

Ingredients

  • 1 cup of sliced onions
  • 1 ½  cups of besan
  • 1 tsp red chilli powder
  • 1 tsp coriander powder
  • Pinch of turmeric and cumin powder
  • Vegetable oil (for frying)
  • Salt as required

Method

  • Add red chilli powder, coriander powder, turmeric, cumin powder and salt to the onions and mix it well.
  • To this, add the besan and half a cup of water and mix it into a semi-runny batter.
  • Heat some oil in a pan and add dollops of the besan-onion mixture into hot oil.
  • Allow it to cook for 1-2 minutes till it turns golden and crispy from all sides.
  • Soak the excess oil and spread out the pakodas on a plate.
  • Sprinkle some chaat masala on it and serve it piping hot.
