  • 1 cup of brown rice
  • 5-6 medium sized tomatoes
  • 1 cup of thinly sliced onions
  • 8-10 mint leaves
  • 1 chopped green chilli
  • 1 tsp of fennel seeds
  • 2 tsp of vegetable oil
  • 2 cups of water
  • 1 tsp of turmeric powder, red chilli powder and garam masala
  • Salt to taste

Procedure –

  • Dice the tomatoes and add it to a food processor. To this, add green chilli and mint leaves and blend it to a fine consistency.
  • Heat the oil in a pressure cooker, add the fennel seeds and onions and cook it till the onion turns slightly tender and brown.
  • To this, add the tomato puree and the rest of the ingredients. Close the lid of the pressure cooker and allow it to cook for 2 whistles.
  • Serve it hot with a sprinkle of finely chopped mint leaves.

Desi Stir Fry

Ingredients –

  • 1 cup of broccoli, zucchini, baby corn, mixed peppers each
  • 2 tsp sesame seeds
  • 1 tsp of mustard oil
  • A pinch of red chilli powder and garam masala
  • Salt to taste

Procedure –

  • Heat some oil in a pan and add sesame seeds. Once the seeds start crackling, add the vegetables and give it a good stir while allowing it to cook for 3-4 minutes.
  • Add a pinch of the spices and salt as per your taste.
  • Top it up with a generous squeeze of lemon and serve it hot.

Lasagna Soup

Ingredients –

  • 250gms of whole-wheat lasagna noodles\
  • 2 cups of tomato puree
  • 1 cup of parboiled lentils
  • 4 cups of vegetable stock
  • 12-15 baby spinach leaves
  • 2 thinly sliced garlic cloves
  • 1 cup of chopped onion
  • 1 tsp of oregano
  • Salt and pepper to taste

Procedure –

  • Take a large vessel and add the onion, garlic and oregano and cook it for 3-4 minutes.
  • To this, add the tomato puree, vegetable stock, lentils, salt and pepper and allow it to cook for 8-10 minutes.
  • Once the mixture starts bubbling, add the lasagna noodles and cook it for 10-12 minutes. Once the lasagna noodles soften, add the spinach leaves and cook it for another 2-3 minutes.
  • Serve it hot with a drizzle of thinly chopped spinach leaves.

Whole Wheat Bread Pizza

Ingredients –

  • 2-3 slices of whole wheat bread
  • ½ cup of grated carrot, cabbage and capsicum each
  • 2 tbsp of plain yogurt
  • 3 tsp of fresh cream
  • Salt and pepper to taste

Procedure –

  • Take a mixing bowl and add the grated vegetables, yogurt, fresh cream, salt and pepper. Mix it well.
  • Take a slice of bread and add a generous amount of this mixture onto it. Repeat this step with the rest of the slices of bread.
  • Heat a flat pan and place the vegetable mixture side of the bread directly onto it. Allow it to cook for 2-3 minutes and grease it with some butter if needed.
  • Flip the bread slice and cook the other side for another minute.
  • Cut it into two halves and serve it hot.

Rava Oats Idli

Ingredients –

  • ½ cup of semolina/rava
  • 1/s cup of oatmeal powder
  • 1 cup of plain yogurt
  • 1 grated carrot
  • ½ cup of chopped coriander leaves
  • 1 finely chopped green chilli
  • ½ tsp of Eno fruit salt
  • 1 tsp vegetable oil
  • Salt to taste

Procedure –

  • Take a large mixing bowl and add rava, oatmeal powder, carrot, green chilli and coriander leaves. Mix it well.
  • To this mixture, add the yogurt and salt and mix it well while adding a little bit of water occasionally to make the batter smooth and consistent. Set this batter aside for 15 minutes. Now add a pinch of the Eno fruit salt and mix again.
  • While the batter is resting, heat the idli steamer with water and grease the idli plates with vegetable oil.
  • Add a spoonful of the batter to each of the idli cavities and place it in the steamer for 12-15 minutes until it appears completely cooked.
  • Serve it hot with tomato or mint chutney.
