Dal Vada

  • ½ cup of chana dal
  • ¼ cup of moong dal
  • ¼ cup of toor dal
  • ¼ cup of urad dal
  • ½ cup of chopped onions
  • ¼ cup of grated carrots
  • 1 inch ginger
  • 2 green chillis
  • 2 tbsp finely chopped curry leaves
  • 2 tbso finely chopped coriander leaves
  • Pinch of hing
  • Salt as needed
  • Oil (for frying)


  • Soak all the four types of dal together for a minimum of 2 hours.
  • Now combine the soaked dal with chilli and ginger and blend to a fine coarse paste. Do not add water while blending.
  • Transfer the mixture to a bowl and add chopped curry leaves, coriander leaves, onion, carrots, hing and salt, and mix it all well.
  • Now grease your palms and take a dollop of the dal batter. Carefully shape it into a circular-shaped vada. Repeat this to prepare all the vadas.
  • Heat the oil in a pan for frying and drop each vada in hot oil. Deep fry both sides carefully until they turn golden-brown and crisp.
  • Serve it piping hot with mint chutney, tomato ketchup and chai.

Hara Bhara Kebab

  • 1 cup of potatoes (boiled, mashed)
  • 2 cups of spinach (blanched)
  • 1 cup of green peas (boiled)
  • ½ cup of capsicum (chopped)
  • ½ cup of coriander leaves (chopped)
  • ½ inch ginger
  • 1 green chilli
  • ½ tsp cumin seeds
  • ½ tsp cumin powder
  • ½ tsp garam masala
  • 1 tsp aamchur powder
  • 1 tsp chaat masala
  • 1 cup of breadcrumbs
  • ¼ cup of maida
  • Salt as needed


  • Heat some oil in a pan and add cumin seeds, green chilli and ginger. Once it starts sizzling, add capsicum and saute it until it turns slightly soft. 
  • Next, add the boiled peas and blanched spinach. Mix it well and allow it to cook for 1-2 minutes.
  • To this, add cumin powder, garam masala, aamchur powder, chaat masala and salt. Mix it well and take it off the flame. Allow it to cool down.
  • Once cooled, blend this mixture together in a grinder in order to prepare a coarse mixture.
  • Transfer it to a mixing bowl and add mashed potatoes and coriander leaves and mix it well. 
  • Take a spoonful of the mixture on your palm and shape it into a kebab.
  • Combine the maida and breadcrumbs together in a separate plate along with a little bit of water and a pinch of salt.
  • Coat each kebab in this breadcrumbs mixture and dip it directly into hot oil. Deep fry both sides until it turns golden-brown and crisp.
  • Serve it hot with coriander chutney.

Punjabi Samosa

  • 2 cups of boiled potatoes (chopped)
  • 2 cups of maida
  • 1 cup of ghee
  • ½ cup of green peas
  • 1 tsp cumin seeds and fennel seeds
  • ½ tsp turmeric and red chilli powder
  • ½ tsp garam masala
  • 2 tsp chaat masala
  • 1 tsp ajwain
  • 1 tsp ginger
  • 2 green chillis
  • 2 tbsp lemon juice
  • 2 tbsp coriander leaves (chopped)
  • Salt as needed


  • In a mixing bowl, combine maida, ajwain, half cup of ghee, a pinch of salt and some water and knead all of it together to form a hard dough. Set it aside for 15 minutes.
  • Now divide the dough into equal round portions depending on the size of the samosa you want. Flatten each dough ball to an oval shape using a rolling pin and cut it in the centre to form two semi-circles.
  • Meanwhile, heat the rest of the ghee in a pan and add ginger and green chillis. Once it starts sizzling, add the boiled potatoes, green peas, spices, coriander leaves and lemon juice Mix all the ingredients together well.
  • Now lay each semi-circle flat on your palm and apply water on the straight side using your finger. Roll the watered side together to form a triangular-conical shape and seal any open ends with water.
  • Fill each cone with potato stuffing and fold the samosa close, sealing the edges with water.
  • Prepare all samosas in the same way.
  • Heat some oil in a pan and deep fry each samosa till it is golden-brown and crisp.
  • Serve it hot with tomato ketchup and your choice of chutney.
